Stove Top Turkey Chili

Turkey day has come and gone in Canada!

Our American friends still have a few more weeks to wait, but all across the Great White North, Canadians are unbuttoning our pants and trying not to feel TOO guilty about indulging on that second piece of pie.

One of the upsides of Thanksgiving, or any big holiday meal, are the leftovers! Unfortunately, a girl can only eat so much roast turkey before she's had enough... so what to do?

A popular option is soup, but with the days getting colder and colder I recommend something a little heartier. Why not make Turkey Chili?

Put the Crock-pot away, this baby only takes an hour and all you need is a big soup pot!

Of course, even if you don't have turkey leftovers you can buy some ground turkey to make this lean chili as well.

Stove Top Turkey Chili (serves 8-10)

  • 2 lbs turkey
  • 1 yellow onion - diced
  • 3 medium carrots - sliced
  • 1 red & 1 orange pepper - diced
  • 2 cups frozen corn
  • 1 can red kidney beans, rinsed
  • 1 can white kidney beans, rinsed
  • 1 tsp garlic powder
  • 6 tbsp chili powder
  • 1/2 tbsp cayenne pepper
  • 1 tbsp paprika
  • 4 tomatoes - diced
  • 2 tbsp tomato paste
  • 2 cup vegetable broth
  • optional - 1 tbsp cornstarch in 1/4 cup cold water to thicken


1) Prep your turkey. If you're using leftovers you can opt to either shred/cut into smaller pieces, or blend in a food processor to grind it up! If you're using raw, proceed to step 2

2) In a large sauce pot over medium-high heat, add your olive oil and onions. Saute for 2 minutes and then add your turkey (if raw, brown the meat, if already cooked, saute for another 2 minutes).

3) Add your carrots, peppers, beans and corn to the mix, saute until the vegetables begin to soften (about 5 minutes) lower heat to medium. Pour in your garlic powder, chili powder, cayenne pepper and paprika and stir until everything is well coated. Let sit for 5 minutes.

4) Add your diced tomatoes and tomato paste. Again, stir until everything is well coated and smelling delicious! Then pour over your vegetable broth. Crank that heat back up to high and stir occasionally until it comes to a boil.

5) Reduce heat back down to medium so you have a nice bubbling simmer going and cover. Now comes the torturous part of WAITING! I recommend waiting an hour for all the flavours to meld, your meat to get tender and your veggies to soften nicely, but if you're feeling rushed you could take it off in 20 minutes.

optional: If all the water hasn't boiled down before serving, add the cornstarch mixture to thicken to the perfect consistency! Just pour it in and stir for 2 minutes.

You're ready! Spoon that chili into bowls and serve! Have some cheddar cheese and sour cream handy if you need to sprinkle and dollop your meal. And of course some delicious warm bread on the side for dipping!
