Snacktember - Gluten Free (& Vegan!) Apple Fritters

#Snacktember continues my friends!

And today I am sharing my recipe for Gluten Free, Vegan, Apple Fritters.

Don't let all those labels scare you, these are DELICIOUS! 

During my month of Gluten Free living, I had two major cravings: Waffles and Donuts... Well the grass may be greener on the other side of the fence, but I was determined to come up with some delicious baked goods that fit the bill.

Let me tell you... success! 

These treats were made with rice flour, coconut milk, home pureed apples and sheer determination. They turned out fluffy and delightful, perfect for a more decadent breakfast treat, or to pop a few on a car trip rather than stopping for donuts.

All you need is coffee and you're ready to go! 

Gluten Free (& Vegan!) Apple Fritters - Makes 12-15 fritters

  • 1 cup unsweetened coconut milk
  • 1 tsp apple cider vinnegar
  • 3 tbsp coconut oil (melted)
  • 3-4 apples, chopped and pureed*
  • 2 cups rice flour**
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • vegetable oil for frying
*If you want to substitute for applesauce, the yield is just over 1 cup. I would recommend cutting up at least one apple into very small chunks and putting it in your dough though!

** I use Bob's Red Mill, but whichever brand you prefer is fine. If you're not bothered about GF, use just a liitttle less white flour. If you don't want to use rice flour, almond flour would also work nicely.

a quick note on working with rice flour: The first question I was asked when I showed someone this recipe was "doesn't the rice flour make it grainy?" - NO... if you pan fry it. The hot heat seems to fluff up the rice flour and give it the perfect fluffy consistency.

If you bake with rice flour at 350 the answer is sadly yes (trust me I tried), and no amount of added moisture will make it less grainy, so if you're determined to bake and not pan fry, don't use rice flour.


1) If you're not pureeing your own apples, skip to step 2! If you are pureeing your own apples (which I recommend...)

Start by peeling, coring and dicing your apples up. Add the pieces to a small pot with 1/4 cup of water and bring to boil over medium high heat. Keep cooking until apples are easy to mash with a fork. Remove from heat and strain any extra water, then mash using fork or potato masher. Try to leave some chunky bits! They'll taste great in your fritter. 

2) In a small bowl, combine coconut milk and ACV and whisk well. Add in your apple puree and your coconut oil and set aside.

3) In a larger bowl, combine your flour, sugar, baking powder, baking soda, salt, nutmeg and cinnamon. Stir well.

4) Grab a wooden spoon. Slowly add your wet ingredients to your dry ingredients, mixing well with the spoon. The batter should be nice and thick but if you're unable to mix in all the flour just add 1 tbsp of coconut milk at a time. Batter should be sticky and easy to manipulate, but not TOO firm.

5) In a small frying pan over medium-high heat, add about 1/4" of oil to the pan and let it get hot. Grab a spoon and, in batches of 4, add scoops of your batter to the pan (should be about 2" across).

You need to cook fritters for about 6-8 minutes. I flipped them every 2 minutes with a spatula to make sure both sides cooked through evenly and didn't burn (so 2 minutes one side, flip 2 minutes, flip 2 minutes, flip 2 minutes, cooked!)

Once done, remove from pan and set aside on paper towel to cool and drip dry.

All ready! Try and wait 5 minutes so you don't burn your mouth, but get 'em while they're hot!

Some people like a baked and glazed fritter, but I promise that these flash fried ones will be your new favourite. Though if you feel like making a dipping glaze for them you can always do that too!
