I don't really know why I was so against the delicious orange veggie, but when I was in high school, you had better believe it was a Yukon Gold Potato or bust. Bring on the starchy goodness! Ideally sliced, fried and covered with cheese curds and gravy; but then I am a true Canadian girl.
In the past few years though, I've started embracing the sweet potato; not just because it's delicious, but also for it's incredible health benefits.
Sweet potatoes, with their deep orange (and sometimes purple) colour, are SUCH a power vegetable. Just 1 cup of baked sweet potato can provide you with:
- ALL your vitamin A (serious antioxidant alert)
- 50% of your vitamin C (take THAT scurvy)
- 30% of your biotin (makes your nails and hair strong!)
- 26% of your daily fiber
- great amounts of: manganese, copper, vitamin B1 B6 B2 and B3, potassium and phosphorus...
- All for under 200 (remarkably stomach filling) calories.
With stats like that, how could you say no to a food that tastes like candy!?
