Shepherd's Pie - A Winter Favourite!

It's a bit nippy out! I've fully transitioned into "keep warm" meals lately and decided the other day on an old winter favourite - Shepherd's Pie! Perfect for a cozy night in.

This is easy to make, with few ingredients that leads to happy diners!

Shepherd's Pie (serves 4)

- Ground Beef
- 4 medium sized yellow potatoes, peeled
- 2 small onion, diced
- 4 cloves garlic
- 1/3 cup frozen corn
- salt, pepper, rosemary, parsley, basil and cayenne pepper to season.


1) Peel your potatoes. don't worry about peeling completely, it's nice to have some peel in your mashed potato topping (as my mom says "that's the part that's good for you"). Boil a large pot of water and put the potatoes in to boil. While they're boiling, move on to your veggies. Make sure to periodically check them for softness. Once you can put a fork through them pull them out and rinse, then let sit until cool.

2) Dice your onion and garlic. In large frying pan over medium-high heat, saute in 2 tbsp of olive oil. When the vegetables are soft, add your frozen corn and saute until warm. Set aside. 

3) Lower heat to medium and add your ground beef to the pan. Make sure to cook THOROUGHLY. When meat is about half way cooked, crack one egg and add 1 tbsp of flour to the mixture. I like to do this to make the bottom a bit stickier, so it holds together nicer.

4) When your egg and flour are all mixed in and your meat is thoroughly cooked, add your vegetables back in and saute all together. 

5) Add your seasonings. I did this very much "to taste" with salt, pepper, rosemary, basil, parsley and cayenne. I've tried to add the approximate measurements in the ingredients, but really all you can do is take a nibble and adjust! You may want to use seasonings I haven't listed, but I wouldn't skip on the rosemary!

At this point you'll also want to preheat your oven to 350

6) In a large baking pan, squish (the technical term) your meat down so that it's level on top, making sure to fill in right to the corners.

7) Take your rinsed and cooled potatoes. Cut them up on a cutting board into small pieces then put into a large bowl. normally I'm against mashing potatoes with a hand-mixer (I believe potatoes should have lumps) but for shepherds pie it's the right course of action. Whip on medium speed until your potatoes are nice and fluffy. You may want to add a spoonful or two of butter and some milk!

8) Scoop your potatoes on top of the meat in the baking pan (scoring the potatoes with a fork to create "waves") and pop it in the oven for about 10 minutes, allowing the flavours to bake together a bit. Right before serving, kick the broiler on for 3-5 minutes to add a bit of browning to the tops of the potatoes

You're ready to eat! Quick, easy and delicious (not to mention it warms you down to your toes)
