Lemon Sockeye Salmon... SURPRISE!

Sockeye Salmon Recipe

The other day I had a bit of what I like to call "The Dumb". With the changing weather, I've been finding it difficult to keep my eyes open, let alone be effective at work or in my day to day tasks. Throw in some post bridal-party exhaustion and I was in pretty rough shape.

I decided that what I needed to fix "The Dumb" was to have some brain food! I went to the store and picked up some Sockeye Salmon to cook up for dinner.
I got home, chopped up some asparagus, green onion, garlic, lemon. Made my marinade, and put the salmon in, was ready to start on some risotto when.... 

SURPRISE! My parents were 5 minutes away and they were taking Kris and I out for dinner! 

Of course spending time with my parents is always fabulous, but I was a little dissapointed about my dinner. I quickly threw all of my chopped veggies and my marinating salmon into freezer bags, and put them in the freezer for another day.

Last night, after a long day, I was able to pull out my already chopped, measured and marinating salmon and risotto fixin's, and throw together a delicious meal.

Here's the Recipe for what I'm now calling "Lemon Sockeye Salmon, SURPRISE!" I served it with a side of Asparagus risotto (post on risotto making here) as well as some steamed Asparagus and a delicious Shrimp Cocktail with Cayenne powder mixed into the cocktail sauce.

Lemon Sockeye Salmon, Surprise! (Serves 4)

  • One large cut of Sockeye Salmon (roughly 600g)
  • 1/2 cup white wine
  • 1/2 cup olive oil
  • 1 Lemon, juiced
  • 4 green onions, sliced thin
  • 3 cloves garlic, minced
  • 1 tsp capers, crushed
  • Salt and Pepper to taste.

1) Cut your salmon into 4 fairly even pieces. Place in a baking dish and set aside.

2) Mix other ingredients together to create your marinade. Once mixed, pour over salmon and set aside in fridge for about 30 minutes. I took this time to prepare my sides!

3) When you're done making up your sides, grab a large pan and put on stove over medium-high heat. Place pieces of salmon in pan, scale side up and cook about 5 minutes. Flip to scale side down and cook another 4-5 minutes, or until salmon is flakey and just a BIT pink-red in the center.

4) Serve! You can include some lemon wedges on the side if you like but if you've had it marinating for long enough you want need to!

I put all of my sides with the salmon on a large tray to serve in the middle of the table. It made for a nice presentation before we chowed down!
